{"id":54403,"date":"2015-09-11T10:42:58","date_gmt":"2015-09-11T16:42:58","guid":{"rendered":"http:\/\/www.craftbeer.com\/?post_type=recipes&#038;p=54403"},"modified":"2016-11-03T11:30:23","modified_gmt":"2016-11-03T17:30:23","slug":"mole-and-stout-battered-salmon","status":"publish","type":"recipes","link":"https:\/\/www.craftbeer.com\/recipes\/mole-and-stout-battered-salmon","title":{"rendered":"Mol\u00e9 and Stout Battered Salmon"},"content":{"rendered":"<p>The batter for this salmon contains many of the traditional ingredients one would find in a traditional\u00a0mol\u00e9 sauce, except the cocoa powder is replaced with a <a href=\"https:\/\/www.craftbeer.com\/styles\/american-stout\">stout<\/a>.<\/p>\n<p>The batter is a bit overpowering for white fish, so I substituted salmon to stand up to the strong\u00a0mol\u00e9\u00a0flavors.<\/p>\n<p>To make this mol\u00e9 and stout battered salmon, pour enough canola oil in the skillet to submerge half the fish and turn the burner on to medium.<\/p>\n<p>Pat the salmon dry with a paper towel. Mix the flour and the spices in a deep bowl and then whisk the beer into the flour mixture to create a batter.<\/p>\n<p>Test that the oil is hot by dropping in some batter and look for a sizzle. Once the oil is hot, dredge the salmon in the batter on both sides, shaking off any excess.<\/p>\n<p>Cook the salmon for 5 minutes per side. Transfer to a paper towel lined plate to absorb any extra oil.
